This rice from Acquerello is a particularly delicious. They use a helix method for whitening the rice (rubbing the grains together) that allows for the germ to remain in tact, for more flavor and nutritional value. The rice is then aged to allow for more absorption during the cooking process. Great for risotto, soups and salads.
